Garlic Scape Chimichurri Sauce

Chimichurri is a vibrant, zesty condiment. It is also the perfect companion for grilled meats and vegetables—especially during the sunny summer months. Because it’s uncooked, chimichurri keeps things full of fresh flavor.

Prepared with market ingredients, like parsley and garlic (or garlic scapes, as featured in this version), this recipe is an easy way to bring bold, herbaceous flavor to any dish. Brighten up your plate with HPFM’s garlic scapes chimichurri sauce.

Ingredients

1 bunch garlic scapes, thinly sliced
1 bunch parsley, chopped fine
1/2 bunch cilantro, chopped fine
1/2 tsp dried oregano
1/2 tsp red pepper flakes
1/4 cup olive oil (Think Kofinas Olive Oil at the market)
2 T red wine vinegar
Salt and black pepper to taste

 

Instructions

Combine all ingredients in a bowl.

Season with salt and pepper.

Let sit for at least half-an-hour to enable the flavors to bloom and meld.

Adjust seasoning to taste.

Serve over grilled meats or vegetables. (Try roasted whole radishes!)

Store in a glass jar in the refrigerator.
