Peach Basil Shrub with Honey
Looking for a great way to cool down? Let yourself enjoy a special treat with a peach basil shrub.
The word “shrub” comes from the Arabic word sharab, meaning “drink.” Shrubs are prepared using ingredients such as fruit, a sweetener and an acid. They are the perfect start of any summer mocktail or cocktail.
Plus, schrubs are an excellent way to use any overripe or bruised fruits. Don’t let anything go to waste. We have a recipe here for a Peach Basil Schrub, but feel free to subsitute an fruit or herbs you might have on hand.

Here is how to prepare this treat with fresh, seasonal ingredients from the market:
Ingredients
3 small peaches
1/2 cup honey
1 sprig basil
1/2 cup apple cider vinegar
Instructions
Wash the peaches thoroughly.
Chop the fruit and add it to a clean jar.
Add the rest of the ingredients to the jar and stir together.
Let the mixture sit on your counter for 1-3 days. Stir every day.
Strain the mixture through a fine mesh sieve. Store the juice in the fridge.
Use the mixture as flavoring for mocktails or cocktails. Start with about 1/4 cup of the shrub in a glass with ice and top with sparkling water. If desired, add the spirits of choice.
